She has been nut and peanut allergic since 1960 and is a leading expert in food allergy risks and controls. She has worked with the UK Anaphylaxis Campaign since 1994 and undertakes training and consultancy for food businesses of all sizes. She is a leading food safety expert and consultant adviser to many major UK food manufacturing and catering businesses. Her business (www.hygieneauditsystems.com), led by Principal Consultant Karen Martin, also provides innovative accelerated learning training in food safety and health and safety. Dr Ian Leitch, PhD, BA (Hons), FCIEH, Cert Health Ed was Script Editor for the DVD Training pack. He is a Chartered Environmental Health Practitioner specialising in food controls and food allergy risks and previously adviser to the Food Standards Agency and the UK Anaphylaxis Campaign. News update Spring 2012 Our Food Allergy Training Kit is proving very popular with a wide range of clients. We have listened to leading food manufacturers, retailers, caterers and trainers who have been using the previous Food Allergy Training Kit since 2006 and updated it with an additional activity, some new legal cases and some practical lessons learned.
